Alambre de puerco adobado

I had different dinner ideas entirely. But when I walked by the smoking grill at Los Mezquites, I was hooked. When I saw they had alambres, I was in.

They're sort of like fajitas but in smaller pieces and always with cheese. You can pick your meat (or meatless) option.  The pork (marinated in his special mix of guajillo chiles, spices, and apple cider vinegar) was delicious, as was the smoky salsa and everything else.

HIGHLY recommended.
