Gnocchi alla romana (disambiguation)


So, as previously discussed, Thursdays are gnocchi day here in Rome. Those little pillows of potato goodness are familiar to most, and when they are good, they are very very good, but when they are bad they are a gummy mess.

Gnocchi alla romana, however, are not just another way of referring to the Thursday gnocchi phenomenon. They are another delicious beast entirely.

If you have ever made polenta and then cut out squares to pan fry, you can make these gnocchi. They are simply semolina flour cooked in milk or water with some cheese and egg added. This is then spread out and cooled and cut into little rounds, which are then baked up fresh with a whack of Parmigiano Reggiano. I've heard they are sometimes served with potato sauce, but that's strictly unnecessary. Take it from me.
